The Spéciale « Besson’s Brothers ».
This oyster is developed by enthusiasts for enthusiasts . The route and refining this oyster grown in brackish water , give it its original flavor , rich and sought after. It is the fruit of a family know-how and long, careful work , in order to achieve the desired result .
The « Fine de Claire » is a round and firm oyster. It is refined in clear , in the basins of former salt marshes of Marennes Oléron, shallow clay that bring a milder taste , reminiscent of hazelnut, less iodine than farming at sea.
The green « Fine de Claire », refined as a Fine de Claire, she takes this color in his pelvis passage, where it is in contact with the blue navicule , an algae that once filtered by the oyster gives it its unique colors.
The « Spéciale de Claire », selected for its regular shape, its roundness and thickness for a larger volume of flesh. It is distinguished by a stronger consistency, a remarkable balance between sweetness and salinity. Adding to its sailor taste the subtlety of a maritime flavor. It is the oyster that will choose the amateur who enjoys the fleshy oysters and balanced flavors.
The « Pousse en Claire » particularly meaty and satisfying. Firm, tasty , volume and flavor from special refining conditions : she spends at least four months to clear.
